Amerio contact plate freezers offer an alternative to freezing, as products come into direct contact with plates that freeze products to a core hardness of 0F at an average of one inch per hour. Not only is this method less expensive than air blast or cryogenic alternatives, but other benefits include: preserved product texture, uniformity and nutrient retention as smaller ice crystals are formed and damage to cells is virtually non-existent.
